are u tired of pumpkin pie

i made pumpkin bars w/cream cheese frosting and it is all gone. if you would like to recipe i will post it if you reply to this post.

I've never actually made anything sweet with pumpkin, always roast it or have it in soup etc, so I'll give your recipe a go. I'm always up for something new!

pumpkin bar recipe

for those that are tired of pumpkin pie or want to try something new for your Christmas party or for Christmas. i was watching food network when a chef said that they didn't like pumpkin pie and i thought "well only a few people eat it at my house so why not try something new." all you cooks know never to try anything new at holiday time, but i did and everyone loved it and i had cut it into individual bars and i only put 12 out and froze the rest. well all 12 bite size bars where gone and the frozen ones too. i made it on wednesday night, but i am sure you can make it ahead of time.

Anna's pumpkin bars with cream cheese frosting

preheat oven to 350
bake 30 mins (i check at 20 mins and i used a toothpick like you do for cakes)

4 eggs
1 cup vegetable oil
15 oz can pumpkin (not the one for pies) just plain pumpkin
2 cups sifted all purpose flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp salt
1 tsp baking soda


on medium speed, combine eggs, sugar, oil, pumpkin till fluffy. i sifted the flour, baking powder, cinnamon, salt and soda together. add flour dry to wet at low speed to combine and smooth. spread into a greased 9 x 13 pan.

cool in pan completely. i cooled the pan on a wire rack, just so the cool air can circulate around it.

cream cheese frosting

8 oz cream cheese softened
1 stick butter softened
2 cups powder sugar sifted
1 tsp vanilla

combine cream cheese and butter and on medium speed till smooth. on low add powder sugar till smooth. add vanilla till blended.


i used 2 tsps to top the bars with the frosting or you can pipe it on. then i sprinkled with powder sugar.

i made the frosting the night before also and then i let it warm up a bit on the counter while i did the dishes and then topped right before i put out the desserts.


if you make it let me know how it turned out. DO NOT OVER BAKE.
